Some weekends I like to cook elaborate meals, others I just want an easy meal. Most of the time when I want an easy meal, especially when I’m the only one eating it. This recipe was surprisingly really easy – I mean it was just rice and beans. Took a while, but it’s a great meal itself, or as a base with other items.
I ended up eating one meal with just the rice, beans and avocado. I ended up having leftovers so I brought them over to the boyfriend’s and we added some meat and it made for a great dinner (and lunch another day). We just cooked up some already marinated carne asada from Trader Joe’s and made it a meal. Quick and easy – especially for a weekday night!
