Baking: Zucchini Bread

As works starts picking up again, it’s really hard to get back into the swing of it all: baking, cooking, and doing everything I need to in life. This zucchini bread was super easy – and delicious the next morning with brunch.

Since the boyfriend had a bit of whole wheat flour left, I decided to substitute half of the all purpose for the whole wheat. Also, he wanted some chocolate chips so we added about a cup and half a cup of pecan for texture (to be read in Mary Berry’s voice). The next morning when we had it with our zucchini, tomato, and ham scramble, it was great!

The recipe makes two loaves so one is staying with the boyfriend and his roommates and one is going to work. The flavors only get better with time.
