Cooking: Enchilasagna

I know it’s been awhile since I’ve posted. There have been a few changes in my life – I’m now single again which makes it a bit harder to go through and cook recipes from a book I was cooking with someone.

Regardless – I’ve started again, in a very short while. I’ll be busy again with work, but this recipe was delicious! The tortilla definitely disintegrated a little when cooked, but the chicken was nice and moist. It was a combination of the two which was good.
