I’ve been a bad blogger lately.
Partially, my blog had been chronicling a book my ex and I were cooking through and now that we are no longer together, it’s been hard. Also, working 60+ hours a week means I don’t want to bake or make pretty things after work. Though it does make me really happy.
I had some cookie butter left over from when I was just shoving it into my face and I decided I would use it in cookies. Also, I used some white chocolate chips (since we somehow don’t have milk or dark chocolate chips at home!). It was like finding stuff in my pantry and using it!
I started with this great recipe from Cookie Named Desire (which is a great name). I used it as the base of my recipe until I realized I didn’t have enough of the cookie butter. I decided to use the cookie butter I had (about 1/4 cup) and added about 1/8 teaspoon of cloves and nutmeg and about a 1 teaspoon of cinnamon. That added some of the same flavors, without adding all the cookie butter.
In the end, it turned out just delicious! Definitely love being able to figure stuff out as I’m baking based on what I know already from baking quite a bit.
