I know it’s been awhile since I’ve posted. There have been a few changes in my life – I’m now single again which makes it a bit harder to go through and cook recipes from a book I was cooking with someone.
Ever since getting my lovely cookbook, I’ve had shared it with some friends who wanted to cook some recipes so I let them borrow it. One of Patrick’s roommates wanted to try the chilaquiles. He made them once and it looked amazing. When it came time for us to make it, it was such a process to get it all done. I’ll definitely enjoy it, but it was too much work for a morning dish. While it’s exciting to be making everything from the cookbook and trying out new techniques and foods, at times, I just want to be done with it all and not have this challenge for myself. There are some great recipes in the Alton Brown book and since I’m still trying to get through them all, I’d figure we would make the tikka masala. We do love our Indian food whenever we go out and eat, and figured we’d just try and make it ourselves at home.
Some days at work now, we’re not as busy, and after a deadline, the office was quite empty. I decided to leave a bit earlier and take my chances and making something from Alton Brown’s book. It’s actually a combo of two recipes, the Chicken Parmesan Meatballs and the Weeknight Spaghetti.

When I start lists, especially cooking or eating related, I get obsessive – I really try and finish things I start. Since I decided to start on this cookbook (EveryDayCook), I wanted to try and do a recipe a week so with a 100 or so recipes, I can get through this cookbook in 2 years (or so). There’s some really great recipes on the list – this is definitely one of them. Since I’ve freed up at work for the most part until January, I’ve decided to start to see if I can get into a good habit of making food on Sundays so that I will have dinners or lunches for the rest of the week. For the longest time I’ve been eating out, so trying to make food in and eat healthier – also because it’s a little cheaper. Being able to make food at home is great as well. I finally decided on a dish on Saturday evening, bought the groceries, and made it Sunday afternoon.
