When we get ingredients for some of the dishes we make, we often have leftover ingredients. That happens quite often actually. My boyfriend just has his pantry full of leftover spices and his fridge is full of ingredients which he really dislikes at times. Cooking: Mushroom Stroganoff

Mushrooms are not something I love. Actually, if I had to choose 2 vegetables I would avoid, it would be eggplant… and then mushrooms. However, I’m coming around to mushrooms. They are definitely filling and a great way to get nutrition as well. I honestly didn’t grow up with stroganoff for dinner when I was young, but this book has been able to take me out of my comfort zone and make some delicious items. This mushroom stroganoff was really good (fed my boyfriend and I for both dinner and lunch the next day), but something that’s just not super comforting to me.

Cooking: Baked Chicken Alfredo with Broccoli

Since I’ve freed up at work for the most part until January, I’ve decided to start to see if I can get into a good habit of making food on Sundays so that I will have dinners or lunches for the rest of the week.  For the longest time I’ve been eating out, so trying to make food in and eat healthier – also because it’s a little cheaper.  Being able to make food at home is great as well.  I finally decided on a dish on Saturday evening, bought the groceries, and made it Sunday afternoon.
